My grandmother made this Pineapple Upside Down Cake, so it is a very special recipe I am sharing with you for the summer season. Nothing says summer like fruit. In Savannah, the pineapple is historically known as a welcome sign. If a party is to begin, the pineapple is right side up. If the party is over, it is turned upside down. So when it is served, the pineapple is right side up, let the summer festivities begin!

Preheat oven to 350 F.

1 stick of butter

½ cups of brown sugar

1 small fresh pineapple, cut into rings

Maraschino cherries


1 ¾ cups of flour

1 ¼ cup of sugar

2 tsp of baking powder

½ tsp of salt

¼ cup of butter

¾  cup of milk

1 tablespoon of vanilla

1 egg

Pinch of Nutmeg finely grated (use a microplane)

Melt the stick of butter in cake pan. Add the brown sugar, pineapple rings, and cherries. Sift flour, sugar, baking powder together with the salt. Add butter, milk, vanilla, egg and nutmeg and beat until smooth. Pour batter over brown sugar and pineapple and bake for about 35 minutes or until a toothpick comes out clean.
