Piper-Heidsieck is one of the oldest Champagne houses and it’s loved the world over by the fashionable and by the experts alike. This Rosé Sauvage Brut dons notes of dark berry and mandarin thanks to the Pinot Noir grape. Here, we’ve added a chamomile infusion to add a dimension of complexity along with a hint of sharpness courtesy of the lime

Ingredients
– 2 dashes of lime juice
– 20ml Chamomile infusion
– 100ml PIPER-HEIDSIECK Rosé Sauvage
– 2 lime slices for garnish

– Ice cubes

Chamomile infusion
– 250ml of water
– 5g fresh chamomile flowers, optionally dried chamomile flowers

Method
Let the water boil, remove from the stove, and add the chamomile flowers for 10 minutes and let it steep.

Strain and refrigerate.
Put ice cubes in a tall glass.
Add the lime juice and chamomile infusion and fill up with PIPER-HEIDSIECK Rosé Sauvage.
Lightly press the lime slices and add to the cocktail for decoration.
