Says Jones: “The resort’s signature cocktail, Carlisle Sunset, is made from locally sourced English Harbour rum from Antigua Distillery. Not only is it refreshing, but it gives a nose of oak, fruit, and a touch of spice. This flavoring is unique for it utilizes rum that has been created in a distillery from 1933 that is outfitted with a Savalle copper still, with 4 columns. These copper columns allow the rum to gain a roundness as it ages due to the distilling process between the metal and the alcohol. The Sunset is the perfect sundowner with a taste of Antigua.”
