Maido in Lima has been named the World’s Best Restaurant 2025, taking the top spot in this year’s World’s 50 Best Restaurants list. Chef Mitsuharu ‘Micha’ Tsumura’s restaurant is known for its take on Nikkei cuisine, where Japanese technique meets bold Peruvian ingredients. Diners are greeted with a cheerful “Maido!” and served a seasonal tasting menu that’s precise, creative, and rooted in place. Last year’s winner, Disfrutar in Barcelona, moves into the “Best of the Best” hall of fame.

This year’s list includes restaurants from 22 territories across five continents, with ten new entries. Potong in Bangkok made the highest debut at No.13, earning the Highest New Entry Award. Ikoyi in London climbed 27 places to No.15 and took the Highest Climber Award. Celele in Cartagena came in at No.48 and picked up the Sustainable Restaurant Award for its work preserving Caribbean culinary heritage and sourcing wild and local ingredients.

Other new entries include Nusara in Bangkok (No.35), Mérito in Lima (No.26), Lasai in Rio (No.28), Enigma in Barcelona (No.34), Kadeau in Copenhagen (No.41), Vyn in Sweden (No.47), and Restaurant Jan in Munich (No.50). Enigma’s Albert Adrià also received the Chefs’ Choice Award, voted on by his peers.
Massimo Bottura and Lara Gilmore were honored with the Icon Award for their work at Osteria Francescana and their social impact through projects like Food for Soul and Tortellante. Maxime Frédéric of Cheval Blanc Paris was named World’s Best Pastry Chef, and Mohamed Benabdallah of Asador Etxebarri in Spain was named World’s Best Sommelier.
The 50 Best Restaurants Scholarship went to Angélica Ortiz, a Colombian chef working in New York. She’ll train at El Celler de Can Roca in Girona and SingleThread in California. The scholarship, relaunched this year, is open to young chefs with fewer than three years’ experience.
The list is compiled by a gender-balanced academy of 1,120 chefs, restaurateurs, and food experts from around the world, with voting independently adjudicated by Deloitte. Sponsors do not influence the results.
This year’s ranking underlines the global spread of culinary creativity. From Lima to London to Bangkok, the restaurants on this list are not just cooking great food; they’re pushing the conversation forward.
