If you’re into bright, citrusy desserts that take almost no effort, this one hits the spot. Lemon curd does all the heavy lifting, shortbread brings the crunch, and the whole thing looks like you planned far more than you actually did. Perfect for a quick dessert when all the family is around.
Ingredients:
- Cartwright & Butler lemon curd
- Cartwright & Butler lemon shortbread biscuits
- Whipped cream or Greek yogurt
- Lemon zest
- Fresh berries
Method
- Crush the shortbread so you get a mix of crumbs and a few chunkier bits.
- Spoon a layer of lemon curd into a glass or jar.
- Add a layer of shortbread.
- Add a layer of whipped cream or yogurt.
- Repeat the layers until you reach the top.
- Finish with a little more shortbread, lemon zest, and a berry if you want it to look cute.
If you prefer something baked, you can turn the shortbread crumbs into a simple crust with a bit of melted butter, fill it with lemon curd, and chill it. Top with lightly toasted meringue or whipped cream.
