How did you get into the industry?
I had been working part time from a young age in restaurants that my dad supplied, went to uni, studied maths and realized I was working “part time” doing 50hrs per week and only 10 hours of lectures so had to reassess what I really wanted to do. 
 
Where did you learn your skills?
Mostly on the job, through different chefs I have worked with and reading. These days Instagram and twitter help with developing new techniques or ideas.
 
What is your signature style?
I wouldn’t say I have a particular dish, but I always try to be seasonal, utilize as much of the ingredient as possible.
 
What is your favorite dish to cook?
Cooking a lovely thick piece of fish correctly always makes me smile when I remove it from the pan, the right amount of crisp skin and then moist tender flesh.
 
Which is your food guilty pleasure?
Probably more than I should, but we have some great little pizza places around west London that the wife and I frequent far too often.
