There are few desserts as effortlessly elegant as a classic lemon tart. With its delicate, buttery pastry and beautifully balanced citrus filling, it is a study in simplicity, where the brightness of fresh lemons meets the richness of cream and the gentle sweetness of a traditional French-style pastry.
A fixture of fine patisserie, the lemon tart has an enduring appeal. Its appeal lies in the contrast of textures and flavors: a crisp, tender crust gives way to a smooth, delicately set filling, while fresh lemon juice and fragrant zest provide a lively finish. It is equally at home at an intimate dinner party or as the concluding course to a more elaborate gathering.
For this interpretation, Chef Mary Beth Lawton-Johnson shares her recipe for a timeless lemon tart, made with a sweet pâte sucrée pastry and a fresh lemon filling. The preparation is refreshingly straightforward, allowing quality ingredients and careful technique to take centre stage.
The finished tart is best served once cooled, when the filling has had time to set. A scattering of fresh berries adds a lovely seasonal accent, complementing the citrus without distracting from its delicate character.
Sweet Pastry (Pâte Sucrée)
Ingredients
- 1 ½ cups of all-purpose flour, sifted
- 8 tablespoons of unsalted butter, chilled
- ½ cup of sugar
- 1 large egg beaten with 1 tablespoon of water
Method
Preheat oven to 375
Combine the sifted flour and chilled butter, working them together with your fingertips until the mixture resembles coarse crumbs. Add the sugar and beaten egg mixture, bringing everything together until a smooth dough forms.
On a lightly floured surface, roll the pastry into a circle approximately 13 inches in diameter, large enough to line a round tart pan. Carefully transfer the dough to the pan, pressing it gently into the base and sides. Trim away any excess pastry and prick the base with a fork.
Refrigerate the pastry for one hour.
Line the chilled pastry shell with aluminum foil and fill with dried beans or ceramic baking weights. Bake for approximately 10 minutes. Carefully remove the foil and weights before adding the filling.
Reduce the oven temperature to 350°F.
Fresh Lemon Filling
Ingredients
- 8 tablespoons of fresh-squeezed lemon juice
- ¾ cup of sugar
- 4 large eggs
- 1 cup of cream
- Zest from fresh lemon
Method
In a mixing bowl, combine the freshly squeezed lemon juice, sugar, eggs, cream, and fresh lemon zest. Whisk until thoroughly blended and smooth.
Pour the lemon mixture into the prepared pastry shell.
Bake at 350°F for approximately 40 minutes, or until the filling is set and the surface has developed a delicate golden hue.
Remove from the oven and allow the tart to cool completely before serving.
To Serve
For an elegant finishing touch, serve slices with fresh seasonal berries. Their natural sweetness and subtle acidity provide a pleasing contrast to the rich pastry and bright citrus filling.
A dessert of understated sophistication, this classic lemon tart is a reminder that the finest culinary pleasures often begin with the simplest ingredients.
