Greg Lambrecht did not set out to reinvent the way the world drinks wine. He simply wanted a glass without having to finish the bottle.

That deceptively simple problem would eventually lead to Coravin, a wine-preservation system that has changed how collectors, sommeliers and restaurants access fine wine by the glass. For Lambrecht, an engineer whose career began in medical technology, the breakthrough came from recognizing that the same precision used to design delicate medical needles could solve an entirely different problem.

Born in Manhattan and raised partly in California, Lambrecht studied nuclear engineering and plasma physics at MIT before earning a master’s degree in mechanical engineering. His early career included work on advanced reactor systems in Japan and later on medical devices ranging from orthopedic implants to chemotherapy delivery systems. Those years gave him an unusually deep understanding of needles, pressure and materials—knowledge that would eventually become central to Coravin.

Wine entered the picture almost by accident. Physicians and colleagues would send Lambrecht bottles as gifts, and his collection gradually became more serious. As his interest deepened, so did a familiar frustration: once a bottle was opened, the clock started ticking.

The idea for Coravin took shape when Lambrecht’s wife was pregnant and he found himself wanting a single glass while preserving the rest of the bottle. He began experimenting at home, combining a medical-grade needle with a way to replace extracted wine with inert gas. The challenge was not simply removing wine without pulling the cork, but doing so without allowing oxygen to compromise what remained.

The eventual solution was elegantly direct. A hollow needle passes through the cork, wine is poured through it, and argon gas replaces the liquid removed from the bottle. Because argon is inert, it protects the remaining wine from oxidation while the natural cork reseals after the needle is withdrawn. The result is a system that allows a bottle to be accessed repeatedly without being conventionally opened.

The road from kitchen experiment to commercial product was long. Lambrecht spent years refining prototypes, testing needle design, pressure, cork behavior and preservation performance. Coravin’s own history traces the first experiments to the late 1990s, followed by more than a decade of development before the system reached the market.

When Coravin finally launched commercially, its impact was felt first among wine professionals. Restaurants could suddenly offer expensive or rare bottles by the glass without assuming the financial risk of opening a full bottle that might not sell quickly enough. Collectors, meanwhile, could taste wines over time without committing to finishing them in one sitting.

That changed more than convenience. It changed access.

For sommeliers, Coravin made it possible to build more ambitious by-the-glass programs. For collectors, it opened the door to comparative tasting, cellar exploration and the ability to revisit a bottle over weeks, months or longer. The system has since become widely used across restaurants, wine bars and private cellars.

Lambrecht continued to expand the concept rather than treating the original device as the final answer. Coravin Sparkling arrived in 2021 to address Champagne and sparkling wine, where preservation requires maintaining both freshness and carbonation. The system uses a dedicated stopper and gas-pressure approach to help preserve the bottle after opening, extending Coravin’s original idea beyond still wine.

The company has also continued developing systems for different closures and service styles, including solutions for screw caps and higher-volume hospitality use. Yet the underlying idea has remained consistent: remove the obligation to finish the bottle simply because it has been accessed.

That philosophy is what makes Lambrecht’s story particularly compelling. Coravin is often discussed as a luxury wine accessory, but its significance lies in something deeper. It solved a behavioral problem that had existed for centuries: the assumption that once a bottle was opened, consumption had to follow.

In doing so, Lambrecht gave wine lovers more freedom. A collector could taste a mature Burgundy without sacrificing the entire bottle. A sommelier could pour a rare vintage for one guest instead of waiting for a table willing to order the bottle. A curious drinker could compare regions, vintages and producers at a pace dictated by interest rather than preservation anxiety.

The technology has even found uses beyond conventional service. Coravin has been employed in the authentication and sampling of historic wines, including bottles dating to the 19th century, where removing a cork conventionally could risk damaging something irreplaceable.

Today, Lambrecht remains Coravin’s founder and chairman, while the company continues to operate under a broader leadership team. His role, however, is permanently tied to the original question that inspired the invention: why should enjoying one glass mean sacrificing the rest?

The answer became one of the most consequential wine innovations of the modern era.

What began with a needle, a bottle and an engineer’s frustration ultimately changed how people think about access to wine itself. Coravin did not alter what was inside the bottle. It changed the relationship between the bottle and the person opening, or, more precisely, not opening it.
